- 2 cups sushi rice
- 2 ½ cups water
- 4 oz Forage Earth & Ocean Carrot Lox (from a glass jar)
- 4 sheets nori (seaweed)
- 1 avocado, sliced
- 1 cucumber, julienned
- Soy sauce or tamari for dipping
- Pickled ginger (optional)
- Sesame seeds (optional)
**Instructions:**
1. **Cook the Rice:** Rinse sushi rice under cold water until clear. In a pot, combine rice and water. Bring to a boil, then reduce to low heat, cover, and simmer for 20 minutes. Remove from heat and let sit for 10 minutes.
2. **Season the Rice:** Fluff the rice and let it cool slightly. Optionally, mix in a splash of rice vinegar, a pinch of salt, and a little sugar for extra flavor.
3. **Assemble the Sushi:**
- Place a bamboo sushi mat on a flat surface and lay a sheet of nori shiny side down.
- Wet your hands and spread a thin layer of sushi rice over the nori, leaving a small border at the top.
- Layer carrot lox, avocado slices, and cucumber along the bottom edge of the rice.
4. **Roll the Sushi:** Carefully roll the sushi away from you using the bamboo mat, applying gentle pressure to keep it tight. Seal the edge with a little water.
