Quick and Easy Vegan Sushi: Delicious Plant-Based Rolls in No Time!

  1. Cook the Rice: Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a pot, bring to a boil, then reduce the heat to low. Cover and simmer for 20 minutes. Remove from heat and let it sit, covered, for 10 minutes.

  2. Season the Rice: Fluff the rice with a fork and let it cool slightly. For extra flavor, mix in a splash of rice vinegar, a pinch of salt, and a small amount of sugar if desired.

  3. Assemble the Sushi:

    • Place a bamboo sushi mat on a flat surface and lay a sheet of nori, shiny side down.

    • Wet your hands and spread a thin, even layer of sushi rice over the nori, leaving a small border at the top.

    • Layer the carrot lox, avocado slices, and julienned cucumber along the bottom edge of the rice.

  4. Roll the Sushi: Gently roll the sushi away from you, using the bamboo mat to keep everything tight. Seal the roll by wetting the top border of the nori with a bit of water.

  5. Slice and Serve: Cut the roll into bite-sized pieces with a sharp knife. Optionally, sprinkle with sesame seeds. Serve with soy sauce or tamari for dipping, and pickled ginger on the side if desired.
